The 2020 Cosecha ("harvest") release from Fuenteseca was distilled from Blue Weber Agave grown at an elevation of over 6,700 feet in iron-rich volcanic soil in San Ignacio Cerro Gordo, Jalisco. After harvest, the agave were cooked for 24 hours in a low pressure autoclave, crushed with a roller mill and screw mill, and fermented in stainless steel tanks with proprietary yeast and deep well water. Double distillation occured in copper pot stills and the spirit rested in stainless steel tanks before bottling at 45.7% abv. The high altitude, volcanic terroir of the agave is expressed in a sweeter, softer, and more floral blanco tequila.
